Blissful Bircher Muesli – Goddess Retreat’s Healthy Recipes

We love this Bircher muesli recipe because it provides a tasty and healthy alternative to breakfast cereals while also providing long-lasting sustainable energy for a full day at Goddess Retreats!

Bircher muesli became popular around the 1900s. Maximilian Bircher-Benner, a Swiss doctor, created it for his hospital patients. The plan was to provide a nutritious breakfast as a therapy aid that is easy to digest.  Today it is also known as ‘overnight oats’ and there are so many variations on this recipe, you are really only limited by the types of ingredients you want to put in it!

What we think of as muesli today is a descendant of Bircher’s original muesli, but often with the essential healthy qualities removed due to product’s shelf life. It is missing the fresh fruit and, most importantly, the pre-soaked oats that help with easy digestion.

Soaking the oats overnight is similar to cooking them, but the process is much longer and slower, and it is done without heat. Soaking breaks down the starches and reduces the natural phytic acid, which may help your body use the nutrients in oats more efficiently.

Also, salt and sugar are often added to mueslis today, even though they are not necessary for a great taste. Even though some companies offer a healthier option (no added sugar), packaged breakfast cereals don’t have fresh fruit. There is no substitute for ripe fruit that is full of life, picked fresh and in season.

The recipe is a favorite from our breakfast menu – it’s incredibly tasty and full of energy!

After trying Bircher muesli, it’s difficult to go back to eating cereal from a box!

Blissful Bircher Museli 

Ingredients (serves 2)

1 green apple, unpeeled, quartered, core removed

1 cup (90g) rolled oats

1/2 cup (125ml) apple juice

1/2 cup (130g) natural yoghurt or coconut yoghurt for dairy free option

Large pinch ground cinnamon / nutmeg

1/4 cup (25g) flaked almonds / walnuts

1/4 cup (30g) diced fruit

2 tbs freshly grated coconut ( and/or pepitas / pumpkin seeds)

1/2 tbs flax seeds

Freshly fruit that is in season where you live such as diced mango, passionfruit or berries  and coconut flakes to serve

Method

  1. Coarsely grate the apple. Mix the grated apple, rolled oats, apple juice, yoghurt, and cinnamon in a bowl until well combined. Cover and place in the fridge for 1 hour or overnight.

2. Combine the flaked nuts and seeds in a small bowl.

3. Stir half the nut mixture through the muesli with 1/2 cup of yoghurt, then you can either softly fold in 1/2 the fresh fruit or put in in a jar and layer it for a stunning effect.  Top with the remaining nut and fruit mixture  to serve.
